Paragon 700 Boutique Hotel & Spa

I can only echo the majority of the negative reviews here. Rude owner with absolutely no interest in hospitality. I wish I had stayed somewhere else. Do not be fooled by the photos. There is a good chance you end up getting dumped in a room in the annex near the carpark away from the main building. There is no way of knowing this until you arrive. They don’t warn you. They will not compensate you. This hotel charges premium prices but totally fails to deliver the kind of service those prices demand. The staff are all well meaning but the proprietor appears to create an environment where all guests are treated as potential thieves (see previous comments on this subject). I’m totally shocked to see this hotel appear on lists from reputable sources and can only expect they won’t be on them for very long. There are plenty of great options to choose from in Puglia, many with a strong sense of what southern hospitality is all about… Paragon 700 is not one of those. I would never risk a vacation with them again.

Just called in for a morning coffee to find a beautiful haven amongst Ostuni bustle. Perfect for a space to sit and enjoy. The staff were very welcoming and very informative about the great hotel and its history. We hope to return again. Thank you

We stayed the last few days of our honeymoon in the Paragon 700, a wonderfully quirky hotel full of interesting works of art in an old palace near the top of Ostuni. We were in the vast 'Paragon' room with beautiful faded murals on the high ceiling and a view across the roofs of the old town – palatial indeed. The staff are fantastic, the restaurant excellent and the cocktail bar a destination in itself. Thank you Paragon 700 for the most memorable visit!

The hotel is beautifully decorated so are the rooms, bar and bartenders exceptional. Service good, but could improve. The restaurant service is not good, they seemed lost at breakfast, and dinner experience good but not great and took forever. Also noticed that front desk will only recommend certain restaurants regardless they are good or not.

A dream within a dream within a dream. Carefully curated items add an elevated level of playful sophistication while the food and drink quietly play with senses, teasing you to want more, and each bite and sip bring you closer to more. The vibe is an energy that excites and recharges all while giving you unspoken permission (maybe even a loving push) to be the person you want to be and live the life of your most passionate dream. Service is impressive, attentive and engaging without being too much. It's the rare customer service that can only be manifested through intention (and begins way before hiring). The owners of Paragon 700 must have intention and passion for this dream of an experience because each detail shows it. Sit by the pool even if you don't swim. You'll be transported to another dream. That one dream you had years ago that you still think about because it was that good. A few minutes soaking the energy by the pool will leave you feeling as if you've awoken from a night of the best sleep. Oh, the spa. Book a massage with (oh I'm terrible with names, but I think her name was Marina?). Her energy befriended by energy as she worked on my muscles. Her technique is professional but also has an element of artistry. Stay here. Dine here. Spa here. Even if you stop by for a drink at the amazing bar, you will experience the magic. I had the most creative and tasty non-alcoholic drink, not a typical experience as a non-drinker! Stay here long enough and you'll be lucky enough to wonder if it was all just a dream. Luxury everything, especially service, without a pretention. Elevated, cultivated. A true experience that will enhance any visit to Ostuni. It's worth the trip to Ostuni just to experience the magic of Paragon 700. My new favorite place that my heart will be drawn to forever.

Wonderful stay in Ostuni. Perfect base to explore the area. Incredible design but quite eclectic and lacked refinement.

Such a magical hotel. Incredible staff, gorgeous and spacious rooms, and a perfect restaurant and bar. Only 11 rooms so you feel like family and as if you are staying in someone’s palace. Do not even think twice about staying here!!! It’s the perfect and best hotel in the region!!

I stayed there only for one night but could have stayed at least one other! The location is perfect to visit Puglia, easy to reach by car but also walking distance to visit the city of Ostuni. The building has been so well refurbished from keeping its authenticity to very exclusive services and modern amenities. Each room has its one style and story. The staff is charming and welcoming. They assisted me in all my requests. Breakfast, lunch and Diner are fab, the bar itself worth the visit. Happy contribution to their new orange/peperancino marmelade 😉. All is said, just need to try it now!

We were looking for an unforgettable dining experience and Restaurant 700 delivered in spades! The restaurant is an architectural masterpiece, the attentive staff set the tone for what would become a truly special evening. But it's the care Chef Kevin put into each dish that truly steals the show at Restaurant 700. From the amuse buche to the cotton candy surprise dessert, each dish is a masterpiece, expertly crafted with the finest ingredients and presented with exquisite attention to detail—a symphony of flavors and textures that my husband and I will always remember.
