This is a great choice if you want to be outside of Can Tho proper: Room: we stayed in the Couple Lodge, and it was lovely: attractive, spacious, with a roomy, comfortable bed, an outstanding shower, plenty of outlets and good Wi-fi. As an added bonus we had a small washing machine, complete with soap. Food: the food was surprisingly good. We opted for Vietnamese options every morning, though your basic Western egg plates were also available. We also ate lunch and dinner, and everything was tasty, though Can Tho city is such a foodie haven I would encourage you to have as many meals there as seems practical. Location/grounds: you are a 25-minute taxi ride (about $7 USD) from the center of the city. I ended up having mixed feelings about this: on the one hand, the area surrounding Bamboo is great for a relaxing walk or bike ride, on the other hand Can Tho looks like a cheerful bustling city; one that might have been fun to stroll around a bit without having to plan a major outing. In the end I think I made the right decision, but it did mean I saw less of Can Tho than I might have liked. One benefit of the location is that if you book one or more tours through the lodge's sister company, Mekong Realism (which I very highly recommend) you will meet your guide at the lodge. The grounds are lush and well maintained, and the pool was clean and attractive. Staff: staff were very helpful, and the service was friendly and efficient. As an English speaker, language was never a significant barrier. One small quibble: I'm not sure this place is as "eco" as its name would suggest. Drinks came with plastic straws and spoons, our bathroom window could not be closed (requiring us to air condition the great outdoors) and plastic water bottles were available (though the water in the rooms comes in reusable bottles).
